Mom's Waffles
These waffles are a family favourite. Everyone likes them done differently: Cam likes them light and underdone, James likes them dark and crispy, and Joc likes them golden brown. Cindy and Megha have yet to choose a favorite. I'm part of the golden brown club. And the Roger's Golden syrup club. Whichever way you like them, these are the fluffiest waffles you'll ever have.
Ingredients
- 3 cups flour
- 4 tbsp white sugar
- 2 tbsp baking powder
- 1 tsp salt
- 4 eggs, separated and beaten
- 3 cups milk
- ½ cup melted butter
- 1 tsp vanilla
Method

Heat waffle maker. This recipe makes 8 waffles.

Put flour, sugar, baking powder, and salt into a large mixing bowl. Stir well. Make a well in centre.

Separate the eggs into yolks and whites. Beat egg-yolks until frothy. Add vanilla. Add milk and melted butter.

Whip whites until stiff, but not dry. They should be glossy. A small spoon should stand up straight.

Pour the egg-yolk mixture into the dry ingredients' well. Beat until smooth.

Gently fold the beaten whites into the egg-yolk mixture. Some of the whites will still be seen in the batter. Make sure you don't over-mix the batter to make it totally uniform since the suspended whites give waffles the fluffiness.
