Tomatillo Salsa
Also known as floor salsa. A recipe created in Mexico and kept alive in Canada. This salsa is great on everything, from tacos to eggs. It's so good you'll even scoop it up off the floor if you spill the batch. Since this recipe makes a considerable amount of salsa, it's great that it saves well in the fridge.
Ingredients
- ~10 medium tomatillos
- 1 medium white onion, cut into large chunks
- 2 whole large serrano peppers
- Handful cilantro (less is more)
- 3–4 cloves of garlic, peeled
- 1 lime, juiced
- 1 tsp salt
- 1 tsp cumin (optional — makes the salsa a bit less bright flavoured, but adds a nice dimension)
Method

Grill the tomatillos, onion, and serranos until slightly charred.

Toss all ingredients into the blender and blend until smooth.

Store in airtight jars or containers.
