Vanilla Pudding — Grandma's Real Custard!

This was one of the fairly rare treats we enjoyed as kids, making it much more memorable. Mom would serve it as a warm vanilla pudding, sometimes with fruit, and sometimes with waffles where it would be paired with whipped cream and fruit (decadent). It was also used as a base for the fruit in a sponge-cake fruit-flan. Another special use of this pudding was in her vanilla-cream pie topped with mounds of perfectly browned airy meringue! The wonderful piece is that it doesn't take long to make, and can be made with the microwave (if you're careful).

Vanilla Pudding — Grandma's Real Custard!

Ingredients

  • ⅔ cup white sugar
  • 4 tbsp flour
  • ¼ tsp salt
  • 2 cups milk
  • 2 egg yolks, whisked
  • 1 tsp vanilla
  • 3 tbsp butter

Method

    Mix sugar, flour, and salt. Then slowly add the milk, whisking it together.

    Place in microwave and cook on high for one minute. Stir.

    Repeat this cooking process until mixture begins to thicken. Then add about a tablespoon of the cooked milk mixture to the whisked egg yolks, whisking together. Continue to add small amounts of the milk mixture to the yolks until you get about ½ cup.

    Then add this yolk/milk mixture back to the main bowl of milk mixture, and whisk to combine.

    Continue cooking the pudding in the microwave one minute at a time, stirring after each minute.

    Once thickened to pudding consistency add the butter and vanilla — mix.

    Ready to enjoy!
